It is possible, but unlikely that the bearings and hub and drum assembly from a 2-3/8" diameter axle will fit a 3" diameter do to 2-3/8" diameter axles typically having a 3500lb where the 3" diameter axles are typically 5200-7000lb axles.

The amount of leaves won't make a huge difference on whether they will flatten out or not as what really matters is the capacity of the spring relative to the axle and trailer weight. I would go with at least ta 4,400 lb leaf spring or maybe slightly higher.

I recommend going with the Kenda Karrier ST235/80R16 Load Range E # AM10248 over the Transeagle alternative. I know it might sound like I'm being biased because we carry the Karrier, but when I was comparing the tread on the Kenda compared to the tread on the Transeagle, the Kenda has more grooves and breaks in the tread which means it will be more effective at dissipating water when the road is wet.

The Blue Ox SwayPro Weight Distribution System part # BXW0756 is what I recommend for this trailer as it has what we have found in our testing to be the best sway control and it features a simple bolt-on install. The etrailer leaf spring part # e27SR is the correct capacity and length to work on your 2020 Grand Design Reflection 240RL. It having a couple more leaf's would not be an issue at all either. Since the height would be slightly different you would want to replace all of your springs on your trailer.
